All weekend I preserved things. I was in the kitchen a lot. But not everything I preserved was canned. I also infused and froze.
We utilize a lot of different preservation methods at our house. Consequently our chest freezer is full, as are our cabinets and refrigerator.
I will start with the best preservation of the weekend: watermelon-infused tequila. I love fresh watermelon, but when you buy a big melon (and we did) you need to find something to do with it all before it goes bad.
I chose tequila forĀ this watermelon because watermelon margaritas sound fantastic. And they are.
All you need for this (initially) is a bottle of decent tequila and 1/2 of a large watermelon (or 1 whole small melon).
Hello, watermelon. I’d like you to meet my friend, Jose…
Just cut the watermelon into chunks, and put those chunks into a large jar or glass pitcher.
Then add the tequila…
and cover the top of the pitcher. Let this sit from 2 days to a week. And then, make this:
Watermelon-Tequila Margarita
Ingredients:
- 3-5 oz. watermelon tequila
- 2 oz. triple sec
- 5 oz. lime juice
- 3 oz. sweetened lime juice or simple syrup
Pour all of this into a cocktail shaker with ice. Shake vigorously, then pour into a glass. Top with an infused watermelon slice.
I’m not a fan of salt on my margaritas, but you may certainly add it. I didn’t want to go overboard with the watermelon, so I chose a traditional recipe and just subbed the tequila. You could use pureed watermelon in place of the lime juice if you want a super-watermelony drink.
You can also pour everything into a blender and make a frozen concoction!
Make the tequila tonight and it should be ready for your weekend!
